If you ever go to Essaouira, you must spend the time and take a cooking class at L'Atelier Madada. It was the highlight of my trip and it is worth every penny. You learn how to make some classic Moroccan dishes with the nicest people. Trip Advisor ranks it the #1 thing to do in Essaouira, and I agree.
